Collioure is a good place to spend a few extra days at the beach. Look at the website of the Hotel Casa Pairal. It's in the centre but it's a heaven of peace and very quiet. http://fr.federal-hotel.com/hotel_hotel-la-casa-pairal-collioure_8649.htm

If you have the chance, do visit the ruins of the Cathar castles. Peyrepertuse and Queribus are the best known. And while you're there, drive around and enjoy the scenery of the Pyrénées Orientales. It's so beautiful. For instance, Les Orgues in Ile-sur-Têt, or the Gorges de Galamus in Caudiès-de-Fenouillèdes.
